  • Appetizers
  • Live shelled, 3 days aged north sea langoustine and Scottish scallops
    • With clear strawberry juice, shiso leaves
  • Vinegar marinated north sea mackerel
    • Wrapped in artisanal Nori with freshly grated wasabi (JP), ginger shoots (JP), and Shiso leaves.  
  • Steamed and fried freshwater eel (live filleted)
    • With white miso sauce and freshly grated wasabi
  • Steamed wild north sea seabass
    • With red miso sauce, blended with red onion sauteed in beurre noisette
  • Langoustine rice cooked twice in claypot.
    • Langoustine concentrated butter and dashi cooked koshihikari rice with butter grilled langoustines and wasabi stems
  • Homemade tofu
    • With hazelnut milk and freshly grated wasabi 
  • Sushi
  • Hirame (Brill) nigiri with shiso, lime, salt 
  • Sakura jime-Kintokidai (sakura cured alfonsino) nigiri
  • Chutoro (medium fat tuna) nigiri
  • Otoro (marbled tuna) nigiri with akazu rice
  • Akami Zuke (marinated red tuna) nigiri 
  • Shime Saba (Marinated mackerel) nigiri
  • Hotate (scottish scallops) sashimi
  • Lobster (Dutch, live shelled and aged) sashimi
  • Langoustine (live shelled, 5 days aged) nigiri original
  • Unagi (dutch eel filleted and roasted in house) temaki with its own sauce

  • Home made tofu with imported sugar syrup

Price: 60 Euros*

* Due to the expensive nature of the Omakase (use of ~8 types of seafoods including expensive shellfishes and sourced sustainable Blue fin tuna) and our choice to use many Japanese imports (Hitomebore rice variety, authentic distilled vinegar, and authentic premium soy sauce) the restriction of prices will compromise the quality of the dinner. As we intend to serve only our best courses, compromising the price will negatively affect our performance.

* In comparison to price points of other restaurants in Amsterdam and even to that of store bought sushi, our price is very low not only in relative but also in absolute terms.

*In the extreme case of genuine disappointment, or an impression that there is overcharge - A full refund is guaranteed.
